Facile e veloce!

Feeling lazy tonight? Me too.
After a hard weekend of working with the cupcake team, I don't feel like cooking a feast, so heres a super easy meal to make.





We went to the grocery store and bought some fresh tortellini, some Philadelphia cream Cheese Cooking Creme(Italian herb and cheese), and some chicken and veggies.


I baked the chicken with a little lemon on it.
Cook the veggies to your liking, we steamed our broccoli.
Cook the tortellini according to the package. Once they're cooked, drain all the water out, add the cooking creme and simmer it on low until everything's mixed and hot.
I cut up some of the baked chicken and added it and the veggies to the mix.

The 24 Best Hangover Foods and Drinks

  Happy National Hangover Day! Here's some food and drinks that should help you nurse that raging headache!


Egg McMuffins
Greasy egg-and-cheese combo that is time-tested to, at the very least, ease the pain of one (or several) too many.
 
NUUN
Alkaseltzer-like tablets actually invented by a Dartmouth Bro as his senior project to cure hangovers.
 
Gatorade
Same idea, refuel those electrolytes, Bros.
 
Fries
The greasier, the better. I can’t think of a bad time for fries, but when you are hungover, they are amazing.
 
Burgers
Ditto. White Castle, Five Guys, whatever gets the job done.
 
Coffee
A jolt of hot java should get you back in fighting form, but too much will dehydrate you and leave you with a raging headache that will make you want to kill someone. You’ve been warned.
 
Grits
Southern bros can especially attest — grits can help that hangover.
 
Mac and Cheese
Since Easy Mac may be the easiest thing in the world to make, this one is a no-brainer.
 
Cold Pizza
Here’s where you can applaud drunk you for getting that pizza at 4 a.m. in the first place, and passing out before you finished the whole pie.
 
Scrambled Eggs
They apparently provide something called cysteine, which breaks down hangover toxins from that “cost-effective” alcohol you and your bros chose last night. 

Breakfast Burrito
The more chorizo or bacon the better.
 
Bananas
Potassium will try to heal some of the massive hurt you’re putting your liver through.
 
Ginger Ale
Keep it carbonated. Will keep you from booting in the middle of your morning classes.
 
Eboost
An energy drink — sold in tablets and powder form — that aids in recovery and electrolyte replacement. As featured on "Entourage" recently.
 
Bloody Mary/Mimosa/“Hair of the Dog”
Because nothing will get rid of a hangover like more drinking.
 
Drinkwel
Known as the multivitamin for those who drink alcohol. Apparently guaranteed to make you feel healthier following your late night of fun or your money back. Expect results.
 
Hot Pockets
There is no other time in your life where these unholy pockets of "meat" and "cheese" will be in any way delicious
 
Code Blue
Another “morning-after” drink for Bros. Ingredients should speed up recovery from your latest binge.
 
Waffles
Not McButter. Or pancakes. Or French Toast.

Tuna Melt
Hangover food of choice endorsed by the Iron Man himself, Robert Downey Jr.
 
Watermelon
The water content should help with that blinding headache.
 
Cheese Steak
If you are anywhere near Philly and don’t try to get one of these bad boys when hungover, you have only yourself to blame.

“The Pizza Alternative": calzones that apparently taste delicious, but only because they are clearly horrendous for you.

Whenever the guy at Papa John's offers you a side order of Cheesy Bread for a couple extra bucks, do it. You'll be grateful in the morning.

Beer Beer Beer!

Bear + Deer = Beer?

Here's another good dish for a St. Patty's Day party! In my recipe, it says German beer, because we usually make this for Oktoberfest. But, since St. Patty's Day is also a huge drinking day that this beer-filled fondue is still great! You can substitute with Irish beer if you want to be really festive!
Oh hey, by the way, for all you underage kids out there, if you convince your parents to make this, you're not gonna get drunk. All the alcohol is cooked out, but the taste of the beer stays. Sorry! 

 

Ingredients

  • 1 sack (10 ounces/2 1/2 cups) shredded sharp Cheddar
  • 1/4 to 1/3 pound (4 to 6 ounces) Gruyere, shredded
  • 1 rounded tablespoon all-purpose flour
  • 1 cup German lager beer
  • 2 tablespoons spicy brown mustard
  • A few drops hot sauce
  • A few drops Worcestershire sauce

Directions

Combine cheeses in a bowl with flour.
Add beer to a small pot and bring up to a bubble over medium heat.
Reduce the heat to simmer and add cheese in handfuls.
Stir constantly, melting the cheese in batches.
Stir in a figure-eight pattern with wooden spoon.
When the cheese has been incorporated fully, stir in the mustard, hot sauce and Worcestershire sauce. Transfer fondue to warm fondue pot.


Serve this dish with all kinds of food for dipping. All varieties of bread work great, different meats are good too. Apples are also popular!

Irish Soda Bread!

St.Patrick's Day is almost here!

Every year, my mom and I make corned beef and cabbage, and Irish soda bread.

Irish soda bread is DELICIOUS and tastes great plane, or with a little butter. And its pretty easy to make. Plus, its pretty good for the st. patty's hang over.

 

Ingredients


  • 4 cups all-purpose flour, plus extra for currants
  • 4 tablespoons sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons kosher salt
  • 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
  • 1 3/4 cups cold buttermilk, shaken
  • 1 extra-large egg, lightly beaten
  • 1 teaspoon grated orange zest
  • 1 cup dried currants

Directions



Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.


Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.

With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.

Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a
serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.

Cool on a baking rack. Serve warm or at room temperature.

Food Pyramid

When I used to live in a dorm at my old college, its charts like these that saved me from cafeteria food.
Now, living and cooking for my boyfriend, roommates, and a 3 year old, its charts like these that save my bank account.

Eat me!

These little slices of heaven need no introduction.

1 pound large strawberries
8oz. block cream cheese – soft
3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling)
1 teaspoon vanilla extract (or use almond, lemon, etc. )
Graham cracker crumbs

Rinse strawberries and cut around the top of the strawberry.  Remove the top and clean out inside with a paring knife if necessary.
Combine cream cheese, powdered sugar and vanilla with a mixer or by hand.
Fill the strawberries with the mixture, then dip the top in graham cracker crumbs.
You could also drizzle or dip strawberries in chocolate if desired.

Devour and fall in love.

And a little something for you vegetarians....

This is sooo good that you even you carnivores will enjoy this!

 

Ingredients

  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/8 cup olive oil
  • 1 cup sliced red bell peppers
  • 1 small zucchini, sliced
  • 1 red onion, sliced
  • 1 small yellow squash, sliced
  • 2 (4-x6-inch) focaccia bread pieces, split horizontally
  • 1/2 cup crumbled feta cheese

Directions

  1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
  2. Preheat the grill for high heat.
  3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
  4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.
